Cristiana Meggiolaro - SOTOCÀ - durello frizzante 2021

White sparkling wine fermented on natural yeasts from indigenous grapes of Durella, grown at 450 meters above sea level in the little Community of Brenton – Roncà (VR) on volcanic soils. Secondary fermentation in bottle – Unfiltered.

Vinification: full grapes are soft-pressed, we don't remove the stalks (Whole Cluster fermentation). Fermentation comes in stainless steel tanks under controlled temperature and indigenous yeasts.

Maturation: in stainless steel tanks with their yeasts. We do Batonnage.

Refinement: refermentation in bottle with the must of dried Garganega grapes. Maturation on yeasts. Not filtered.
