Muriel’s advice : Sparkling aperitif wine, gougères, four quarters with olives, risotto, crayfish timbale, ham in crust, salted crêpe, mille-feuille, Roquefort.\n\n
Dry and fruity wine. Friendly, dashing and entertaining.Natural sparkling, fine bubbles with intense Muscat aromas Straw yellow color, natural deposit resulting from fermentation.
Nose : fruity bouquet, intense muscat and notes of mirabelle plums.
Palate : fine bubbles, intense muscat on the palate and a long, saline finish, with nice bitters, a nod to the Spritz.
In the cellar : slow and gentle pressing; first fermentation without adding yeasts; maturing 6 months on lees in stainless steel vats. Bottled at the estate with a natural leaven that causes fermentation, bubbles and deposit.
