The grapes are destemmed and then fermented in steel initially but the wine was moved to a 1000L barrel after one day on skins. Fermentation lasted a couple of months to reach dryness. Full malolcatic. Aged for 12 months prior to bottling. Unfined, unfiltered, zero added sulphites"
