Sparkling wine of traditional method, dry, digestible, fruity and elegant.
Nose: fine bubbles with a light and persistent bead of foam. Notes of hazelnuts and dried fruits develop on a fresh nose.
Palate: the aromas continue on fruity nuances; small red fruits. Harmonious and convivial, with salinity and a beautiful aromatic persistence.
Muriel’s advice : this Crémant d’Alsace is to be offered at all festive moments. It is ideal as an aperitif, on its own or with appetizers. It shines at the table with seafood, salmon, shellfish, pairing harmoniously with most desserts and always crowning a meal majestically.
Vines : Our vines are on average 30 years old, from selected old varieties and grafted to the estate from generation to generation.
Divided into slopes and midslopes on 40 plots for an area of 8 ha. This diversity is found in the grapes of each plot.
The yield is reduced to less than 60 hl/ha.
We mow the grass 1 out of 2 rows and we work the soil of the other row by practising organic viticulture since the 1980s.
We started organic certification in 2019.
Our soils are alive, our vines are balanced, our grapes are «well in their skin».
Terroir : This wine was born in the plot of the place called «Ruescht».This terroir is rich in clay, spring water and provided with large scree of pink sandstone from the Vosges: it is a terroir rich in mineral salts available for our wines.
In the cellar : We taste the grapes to decide on the optimal harvest of each plot and achieve the best balance in sugar, acidity and taste.
The manual harvest is carried out «in boxes».
Our pneumatic press allows a smooth and slow extraction. Our juices flow by gravity and then are naturally released to preserve all their aromas.
The fermentation starts with the indigenous yeasts in stainless steel tanks, without temperature control.
All the steps of the Traditional Method are carried out at the Domaine: taking of foam, aging on slats (about 2 years), disgorging, «crude» dosage.
