As its name indicates, it is Heretic because of its grape varieties, Merlot and Cabernet... A wine to keep, 24 months of aging before bottling. It is dark and complex. A mixture of black fruits… (good age 8/10 years)
Soil: Clay-Sandy. Permian 250 million years.
The red color is due to its richness in iron oxide.
Presence of basalt blocks (black stone) from the volcanoes surrounding the Salagou valley.
Grape varieties: 85% Merlot, 15% Cabernet..
Yield: 45hl/ha Merlot.
25hl/ha cabernet.
Manual harvest.
Vinification: destemmed, pumping over, punching down, vatting for 4 weeks.
Aging: 12 months in barrels of several wines.
Advice:
Wine that can be kept for 5 to 8 years and more.
Decant preferably at least 2 hours before serving.
Serving temperature: 18°.
