Les Bulles du Moulin (2020) Sparkling Aligoté

The "Bulles du Moulin" is an effervescent wine made from the Aligoté grape variety. It comes from the Clos de la Perrière, a 3-hectare vineyard located in Corpeau, southeast of the villages of Puligny-Montrachet and Chassagne-Montrachet. This vineyard, also cultivating Pinot Noir and Chardonnay, enjoys a privileged environment at the heart of the village, protected by stone walls and facing south.


The vineyard practices organic and biodynamic agriculture to preserve soil vitality and enhance microbiological activity. This approach includes avoiding chemical inputs, soil cultivation, and winter grassing. The winemaking process involves manual harvesting, direct and gradual pressing in a pneumatic press, and fermentation without additives using indigenous yeasts in stainless steel tanks. Notably, 15% of the cuvée comes from a 20-day skin maceration. The wine is aged for 12 months in stainless steel tanks, then transferred to bottles for secondary fermentation. The bottles are stored on laths for 18 months before disgorgement in December 2022.


This wine is not dosed and showcases the characteristics of its terroir, which has a clay-limestone soil at an altitude of 220 meters with a south/southeast exposure. The vine density is 10,000 vines per hectare, with a yield of 40 hectoliters per hectare. The vineyard's size is 0.30 hectares, with vines planted in 1967 and 1970.


Produced by Clos du Moulin Aux Moines, located in Auxey-Duresses, Côte d'Or, France, this wine represents a blend of traditional and environmentally conscious practices.
