This wine comes from vines certified organic by ECOCERT since 2002. The terrain is dry and rocky, mainly composed of gneiss with granite sand. It's made from 100% Carignan of about 60 years old.
No herbicides are used; vineyard maintenance varies by location and slope. The wine is traditionally made without added yeasts, and only the best grapes are used. It's aged in older barrels for six months. Minimal to no sulfur dioxide is used, avoiding common but harsh winemaking processes.
