Appearance: Beautiful deep garnet robe.
Nose: Generous and inviting with complex aromas of ripe black and red fruits, delicately smoky with hints of licorice.
Palate: Smooth, full-bodied, and voluptuous, displaying a generous aromatic amplitude balanced by a structured and dynamic framework.
Finish: Superbly expressive, lively, and captivating.
VINEYARD:
Region: Loire - Coteaux de l'Aubance Zone.
Climate: South exposure.
Soil: Ochre rusty shale schists from the Ordovician period.
Grape Variety: 90% Cabernet Sauvignon, 10% Cabernet Franc.
Average Age of Vines: 25 years.
Yield: 45 hl/ha.
Weeding: Mechanical.
VINIFICATION:
Harvest: Manual for vines over 40 years old. Machine for younger vines (Sorting of the harvest at the cellar).
Vinification: Destemmed and crushed grapes, 20-day maceration.
Ageing: In stainless steel tanks for one year.
PAIRING:
The Anjou Villages Brissac "Croix de Mission" from Domaine des Rochelles pairs perfectly with: Grilled meats, game birds. Cheeses. Serving Temperature: 15°C (decanting is recommended).
POTENTIAL FOR AGING:
This wine will gracefully evolve over 2 to 10 years but can also be enjoyed immediately.
