TASTING NOTES (by Didier Coutenceau - Oenologist): Appearance: Pale straw and lime hues. Effervescence: Persistent with lively, delicate bubbles. Bouquet: Subtle and delicate with notes of white flowers - acacia, may blossom, and lime. Palate: Fresh, lively start with strong flavors of ripe fruits like pear and plum. Silky body with a dry, slightly bitter finish. Well-balanced structure.
VINEYARD: Region: Loire - Coteaux de l'Aubance Zone. Climate: Oceanic, with a north-westerly exposure. Grape Variety: 50% Chenin Blanc, 50% Chardonnay. Average Age of Vines: 25 years. Yield: 74 hl/ha.
VINIFICATION: Harvest: Handpicked. Vinification: Traditional method. Ageing: Stainless steel tanks for 1 year, followed by 18 months on lees.
PREPARING AND SERVING: The Crémant de Loire from Domaine des Rochelles pairs excellently with: Aperitif, shellfish, scallops, dishes with white sauces, white meats (veal, pork, poultry) or fish blanquette, pâtisseries, desserts, and sorbets, chocolate pâtisseries with a hint of Cointreau.
