Terroir and Vineyard

This wine is produced from 100% schist rocks on the upper hills of Faugères. It features a unique combination of Mourvèdre, mountain terrain, and schist soils. The vineyard primarily comprises south-facing Mourvèdre (80%+) from the "Les Crozes" parcel, complemented by some north-facing Syrah.


Winemaking Process

Grapes are handpicked in small crates, with selective picking at different strategic times. The custom-built cellar is dug into the rocks, allowing for gravity-fed processing. Each section of a parcel is vinified separately using indigenous yeasts. No sulfites are added during vinification. The winemaker employs soft pigeage techniques and controls temperature. The wine is aged for 12 months in 500-liter barrels (of several years) or in amphorae and egg-shaped vessels.


Wine Characteristics

This mountain Mourvèdre wine has an alcohol content of approximately 14%. It showcases the power of its fruit, aromatic complexity, richness, and balance even at an early stage of aging. The wine has excellent potential for long-term development.


Tasting Notes and Pairing

The wine offers delicate fruity and smoky aromas without flashy exuberance, including notes of raspberry, blackcurrant, dates, and fresh figs. It also presents sweet spices, blond tobacco, and fine scents of garrigue. The palate is smooth and silky with rich, velvety tannins. The overall impression is wild, very pure, and polished, with a very long finish.This wine pairs well with game birds like pheasants and pigeon, a beautiful piece of beef, or fresh pasta with truffles.


The unique combination of Mourvèdre grown on mountain schist soils creates a paradoxical and distinctive wine that showcases both power and elegance, with excellent aging potential.
