This wine is a red Pinot Noir from the Aux Seurrets vineyard, located at the bottom of Pommard in Burgundy. Despite its regional appellation status, it aims to showcase a strong character similar to its renowned neighboring appellations.
Terroir and Viticulture
The vineyard sits on a plain heading towards the Saône, characterized by gravelly soil with red clay and limestone. Planted in 2014, the 0.53-hectare plot has a north-south exposure at an altitude of 200 meters. The vines are densely planted at 10,000 vines per hectare. The vineyard is managed using organic and biodynamic practices, focusing on soil health and microbial activity without chemical inputs.
Winemaking
The winemaking process emphasizes minimal intervention to preserve the wine's terroir expression. Grapes are hand-harvested and sorted, with 30% to 70% of bunches destemmed depending on the vintage. Fermentation and maceration occur slowly in cement tanks for 15 to 20 days using only wild yeasts. Daily pump-overs are performed to extract color and aromas. The wine is aged in oak barrels (less than 10% new oak) for 10 months without racking. The final product is neither filtered nor fined, with minimal sulfite addition. This approach results in a Pinot Noir with an aging potential of 2 to 7 years, yielding 30 to 38 hL/ha.
