Terroir and Viticulture
The Grands Picotins vineyard is situated between la Montagne de Corton and Beaune, bordering Les Beaumonts in Chorey-Lès-Beaune. Its name derives from an old oat measurement unit, suggesting historical grain cultivation. The 0.35-hectare plot sits at 220 meters altitude with a south/south-west exposure. The soil is clay and limestone, notable for its rolled pebbles that provide excellent drainage. The vineyard is managed using organic and biodynamic practices, focusing on soil health and microbial activity without chemical inputs.
Winemaking
The winemaking approach emphasizes minimal intervention to preserve terroir expression. Grapes are hand-harvested and carefully sorted. Fermentation and maceration occur slowly in stainless steel tanks for 15 to 20 days using only wild yeasts, with daily pump-overs. The wine is aged in used oak barrels for 12 months without racking. Neither filtered nor fined, this process results in a Pinot Noir that authentically reflects its origin, with an aging potential of 3 to 7 years and a yield of 30 to 35 hL/ha.
