Alcoholic fermentation with maceration of the peels (25-30 days) at controlled temperature e spontaneous malo-lactic fermentation, both in truncated conical vats of Slavonian oak.
Slavonian Oak Barrels (10-25 hl) for 30-36 Months; in the bottle for at least 6 months
ON THE MARKET: January of the 5th year after the harvest.
Colour: Ruby red color tending towards garnet.
Bouquet: Elegant and persistent on the nose with hints of red fruit, such as cherry, and vanilla.
Taste: structured and harmonious, powerful, with strong tannins and a very long persistence.
Food pairings: roast red meats, game and very aged cheeses.
