Process
The wine undergoes alcoholic fermentation with skin maceration for 15-18 days under controlled temperature, followed by spontaneous malolactic fermentation. Both processes take place in stainless steel tanks.
Aging
Rosso del Cerro is aged in oak barrels of 20 to 32 hectoliters for 3-6 months, followed by a short period of bottle aging.
