Auxey-Duresses is situated in the heart of a valley that starts in the Côte de Beaune and pushes through the Hautes-Côtes on the route of La Rochepot and Autun. With its small villages of Petit-Auxey and Melin, Auxey-Duresses is without a doubt, one of the sanctuaries of the gallo-roman and celtic vines. This ancient town was dependent on the Abbey of Cluny, which main activities were milled flour and grape presses. Only a few Domaines remain today producing from this Appellation established on 1937.
The Auxey-Duresses “Moulin aux Moines” vineyard is one of the Domaine’s 3 monopoles (vineyard exclusively owned by the Domaine). The “vielles vignes” section of the monopole was planted in the 1950’s in the upper part of the clos where the terroir is of a different composition, on a steeper canter, dryer and not to mention closer to the bedrock, supplying the wine with a deeper aromatic complexity pivotal to its character.
Hand-harvested. The crop is sorted on a sorting table and 50% of the bunches are destemmed. We do a slow fermentation and maceration in cement tanks for 20 to 25 days using wild yeasts only. Daily pump overs to fix the color and the aromas. At the end of the maceration, we press and fill oak barrels for ageing for 10 months. The wine is not filtered. We add very few sulfites.
The aromatic profile is very complex and extensive. The mouth is full of flavours of black fruit, cherry juice, eau de vie. Also to be found are meaty almond perfumes that shape the frame of the tannic structure, providing more roundness and finesse than its neighbouring vineyard.
