Our Bourgogne Aligoté comes from 2 vineyards grown organically :
- Les Fas in the heights of Pommard: very old golden Aligotés located at an altitude of 330m.
We always end the harvest with this vineyard which climbs very gradually in maturity, the grapes turn into a golden yellow color giving aromas of honey and citrus.
- Clos de la Perrière in Corpeau: this Clos is located south of Puligny-Montrachet, the Aligotés were planted in the late 1960’s and have higher level of acidity.
Hand-harvested, grapes are pressed slowly and the juice is transferred into stainless steel tanks and old oak barrels for fermentation and ageing to give more aromatic complexity. At the beginning of Spring, wine is then transferred into bottles for “prise de mousse” (capturing the sparkle). It’s the second fermentation that will release carbon dioxide and give bubbles. Bottles are stacked “sur lattes” horizontally in the cellar for 12 months (maturation on lees). Disgorgement occurred at the end of January 2019. Dosage 2g/l.
In 2017 spring has been very warm and budburst started in early April, in advance compared with the previous vintages. During the summer a few spells of heatwave alternated with more mixed weather. Ripening continued and the crop resulted in very healthy grapes.
