Wine from vines classified in Organic Agriculture (ECOCERT certification) since 2002.
The terroir: arid and very stony, often shallow, it is made up of gneiss mixed with granite areas.
Production: No weedkiller is used, depending on their situations and slopes, the vines are plowed with a tractor, a chaser, a horse, picked or mowed with a brush cutter. A rigorous sorting is done at the harvest carried out in a 13 kg box.
Vinification: traditional and without additional yest. Only the grapes that could be eaten, then destemming, vatting carried out without pump, control of fermentation temperatures, maceration of 8 to 20 days depending on the cuvées.
Aging: barrels of 3 and 4 wines for 6 months.
We use little or no SO2, the wines are not fined, we do not practice
not tartaric precipitation, nor pasteurization or other oenological gestures now common but "traumatic" for wine.
