Description by Producer: This champagne is a blended rosé. To do this, the red wine comes from old vines of Pinot Noir. A sorting is carried out in our plots during the harvest, but also on a sorting table before destemming, allowing us an optimal quality of our grapes.
After aging on a latte, the wine acquires a salmon-pink color.
Aromas of blueberry, sour cherry, which reminds us of macerated red fruit aromas.
The whole is fresh, supple, the finish is very expressive with good length.
To enjoy as an aperitif, or for dessert.
It has a salmon color, intense orange, with very fine bubbles.
A fruity nose combining the flesh of apple and ripe strawberry. On the palate, a fruity rosé, quite fleshy, balanced. A winey, full-bodied style with marked fruit aromas. A generous rosé, to be enjoyed as an aperitif, or roomed at the table with a red fruit tart or even accompanied by a duck breast, it will go well. (Comment made by Didier Evrard)

Pressing in whole bunch.
First fermentation in vat after settling of the musts, then Malolactic fermentation. Then comes a last fermentation. This is slow and in the bottle lying on slats.
Aging of 24 months min on slats.
