Ample, powerful and fresh at the same time. The typical aromas of the grape express themselves harmoniously in this wine:
small red fruits combine with hints of cherries which gives the wine a beautiful aromatic richness. In
mouth we find these expressions with a nice fresh balance with melted tannins. It accompanies many dishes: roasted or marinated meat, pan-fried or grilled, foie gras and duck breasts, game
and full-bodied meat accompanied by mushrooms.
At the vineyard:
On a soil rich in clay with calcareous geological substrates and large sandstone scree.
The plot is located on the edge of the village in relief of a chapel and is oriented to the East. The clay soil is rich in
water and very well drained. The vine was planted in the year 1985.
The plant cover one rank out of 2 is for more than 30 years composed of natural weeds.
The other rank is plowed. We have never grassed. The cavaillon is worked with a plow and from time to time
weeded if necessary. The diversity of grasses, both in height of vegetation and in depth and structure of the roots
helps maintain a living soil. The soil then makes the minerals available to the roots. This is how the wine is aromatic,
expressive, with a good taste
The age of the vine, the good balance in water and minerals, the competition with the herbs allows a yield

This wine is selected on a just ripe vintage with some berries at the beginning of wilting, for
obtain a typical wine representing the varietal, on the Alsatian fruit, with soft tannins and a good structure.
Vinification Harvested in the cool of the morning, the maceration begins at the temperature of the cellar and progresses with the fermentation.
We do not intervene on the temperature of maceration and fermentation. Reassembly and slow and soft pigeages

Juices are extracted slowly by gravity directly into the settling tank. The fermentation is spread of 4
weeks to 6 months depending on the year! It is the wine that decides and triggers naturally the malolactic fermentation.
At equilibrium, a racking in the air and a single sulfiting. Then a breeding on lees of minimum 4 months in stainless steel vats. The wine clarifies very well naturally.
