Winemaking: The destemmed grapes are left to ferment in open steel vats. After the spontaneous fermentation start, we proceed with punchings down and pumpings over, as in any fermentation in the presence of skins. Racking is decided according to the characteristics of the vintage. Before Christmas the wine is decanted into old 350 liter tonneaux where it stays for about a year. Bottling generally takes place about a year and half after the harvest.

About Merlot:In the old vineyards of Sarzana area, Merlot grape was widespread and I myself found numerous stumps in the old vineyards. That’s why one of the first replanting I made was a vineyard of only Merlot grape on a loose and strongly pebbly ground, to understand what their potential was in our climate. Many years later, I think I can say this grape has adapted well to our land and our climate, offering us a little recognizable wine in its variety, away from the characteristic herbaceous but also by the heaviness of certain fruitiness.
