"The grapes for this wine come from two parcels – Kirchlay & Letterlay, both on a mixture and grey and blue slate. The grapes are a mixture of a couple of different harvest times to ensure the perfect balance of fruit and acidity.
The grapes were destemmed and underwent a 24-hour maceration before being pressed. Fermentation took place in a double fuder (2000L barrel) and lasted over 6 months. At that stage, the wine was bottled with 15g of residual sugar and it finished its fermentation in the bottle as per the ancestral, or pet nat method. In total it spent 18 months on lees. Unfined, unfiltered, unsulphured."
